Unlike traditional Japanese green teas that are steamed after harvest, houjicha undergoes an additional artisan roasting process that transforms its flavor profile. The word houjicha comes from the Japanese word houjiru (焙じる), meaning "to roast," and cha, meaning "tea." This roasting process creates the tea's signature aroma and deep, satisfying character.
Our Azuma houjicha is produced using specially selected tencha tea leaves, the type of tea used to make matcha, that are steamed, dried, and then meticulously roasted using proprietary deep-roasting techniques. By carefully controlling roasting time and temperature, we develop a complex profile featuring notes of toasted nuts, coffee, caramelized sugar, and subtle chocolate, balanced by a lingering natural sweetness.
The roasted tea is then finely milled into a smooth powder, making it exceptionally versatile for both beverages and culinary applications.
